Half of the hand-harvested grapes are crushed by foot, while half are left whole to give the wine an aromatic lift and soften the tannic blow. Spontaneous fermentation with 4 to 8 days maceration. Aged in stainless-steel for 7 months and in bottle for 3 months. Bottled with minimal sulphur and without filtering or fining. Shows wild strawberry and black cherry fruits and figs. There is a note of smoky herbs and a hint of licorice. A tingling acidity and floral gardenia notes with crunchy red currants and berries with a nice hit of tannin. Serve lightly chilled.
